Gazpacho with Amberjack Tartare

Extra virgin olive oil 10g

Watermelon (Cocomero) 520g
Red peppers (Peperoni rossi) 230g
Cherry tomatoes (Pomodorini datterini) 250g
Cucumbers (Cetrioli) 150g
Celery (Sedano) 50g
Bread 130g
Water 50g
Apple cider vinegar 70g
Fresh basil To taste
Extra virgin olive oil 30g
Tabasco® To taste

Instructions

  1. Prepare the Gazpacho:

    • Start by cutting the bread into small pieces. Place it in a bowl and add 50g of water to soak the bread.
  2. Prepare the Vegetables and Fruits:

    • Clean the red peppers by cutting off the top, removing the seeds and internal filaments. Cut the remaining pepper into strips and then into small pieces, ensuring you have about 240g.
    • Rinse the cherry tomatoes and dry them before placing them into a blender.
    • Cut the watermelon into chunks, slice the cucumber into rings, and chop the celery into small pieces. Add these ingredients into the blender along with the red pepper pieces.
    • Season the mixture with salt and black pepper.
    • Add the olive oil and the soaked bread (after squeezing out the excess water) to the blender.
    • Blend everything together until smooth and creamy.
    • Pass the blended mixture through a fine sieve into another bowl to strain it, ensuring you have a smooth gazpacho.
  3. Prepare the Amberjack Tartare:

    • Ensure that the amberjack has been previously frozen to comply with food safety standards.
    • Cut the amberjack into small cubes and place them in a mixing bowl.
    • Season the tartare with extra virgin olive oil, fine salt, and mix well.
  4. Assemble the Dish:

    • Place a 10cm ring mold (coppapasta) in the center of each plate.
    • Gently press the amberjack tartare into the mold using the back of a spoon to form a compact layer.
    • Carefully remove the ring mold, and delicately pour the chilled gazpacho around the tartare.
    • Garnish with fresh basil leaves, lime zest, and a few dashes of Tabasco® for a spicy kick, if desired.

Serve immediately and enjoy this refreshing and sophisticated appetizer, perfect for a light, summer meal or as a starter for a festive occasion!
