Asafoetida (Hing) A pinch
Green Chilies 2, finely chopped
Ginger 1 inch, finely chopped
Garlic 5 cloves, finely chopped
Onions 2, thinly sliced
Tomatoes 2, finely chopped
Salt To taste
Turmeric Powder (Haldi) 1/2 teaspoon
Methi Leaves (Fenugreek Leaves) 100 grams, washed and finely chopped
Garam Masala Powder 1 teaspoon
Coriander Powder (Dhania) 1 teaspoon
Cumin Powder (Jeera) 1 teaspoon
Fresh Coriander Leaves 1 sprig, finely chopped

Instructions

  1. Boil the Amla:
    Begin by boiling the amla. In a saucepan, pour in enough water to cover the amla. Bring it to a rolling boil. Once the water is boiling, add the whole, cleaned amla. Let it cook for about 4-5 minutes. Afterward, turn off the heat, drain the water, and transfer the amla into a bowl. Allow it to cool.

  2. Prepare the Amla:
    Once cooled, carefully remove the seeds from the amla. Make a slit on one side of the amla to easily separate the quarters. Cut the amla into quarters and set aside for later use.

  3. Heat the Oil:
    Heat a kadai or a wide pan over medium flame. Add the oil to the hot pan. When the oil is heated, add the cumin seeds, fennel seeds, and ajwain seeds. Let them splutter for a few seconds, releasing their aroma.

  4. Add Aromatics:
    Next, add the finely chopped green chilies, ginger, and garlic. Sauté for a few seconds until the mixture turns fragrant.

  5. Cook the Onions and Tomatoes:
    Add the sliced onions to the pan and sauté until they turn transparent. This should take around 3-4 minutes over medium-high heat. Once the onions are softened, add the finely chopped tomatoes, a splash of water, and cover the pan. Let the tomatoes cook until they become soft and mushy, around 5 minutes. Add salt and turmeric powder, stirring well.

  6. Cook the Methi Leaves:
    Push the cooked onion-tomato mixture to the side of the pan. Add the washed and chopped methi leaves to the empty space. Stir gently, allowing the methi leaves to wilt and cook down. Once the methi leaves have softened, mix them into the onion-tomato base.

  7. Add the Spices:
    Now, add the dry spice powders—garam masala, cumin powder, and coriander powder. Stir well to ensure the spices coat the mixture evenly.

  8. Combine Amla and Simmer:
    Add the previously cooked amla wedges into the pan. Add about 2 tablespoons of water to the pan, mix gently, and cover the pan. Let the dish simmer on low flame for 2-3 minutes, allowing the flavors to meld together. After this time, turn off the heat.

  9. Final Touches:
    Taste the sabzi and adjust the salt as per your preference. Transfer the Amla Methi Sukhi Sabzi to a serving dish, garnishing with freshly chopped coriander leaves for an added burst of flavor.
