Instructions:

  1. Prepare the Dal:
    Start by washing the black urad dal thoroughly, 3 to 4 times, to remove any impurities. Then, soak the dal in water for about 30 minutes to soften it.

  2. Temper the Spices:
    Heat 1 tablespoon of oil in a pan over medium heat. Once the oil is hot, add the celery, cumin seeds, and a pinch of asafoetida. Cook until the cumin seeds start to crackle, releasing their aromatic fragrance.

  3. Cook the Onions and Tomatoes:
    Add the finely chopped green chilies, garlic, and onions to the pan. Season with salt and cook until the onions become soft and translucent. After that, stir in the finely chopped tomatoes, red chili powder, coriander powder, and turmeric powder. Cook the mixture until the tomatoes soften and break down.

  4. Add the Dal:
    Drain the soaked urad dal and add it to the pan. Stir everything together, ensuring the dal is well coated with the spices and onion-tomato mixture. Add a small amount of water—just enough to cook the dal, as this is a dry dal recipe. Cover the pan and let it cook for 15-20 minutes, or until the dal is tender and fully cooked. Keep an eye on the consistency, adding more water if necessary, but remember to keep it dry.
