Ingredients:
- 3 Beetroots (chopped)
- 2 tbsp Oil
- 1 tbsp Chana Dal
- 1 tbsp White Urad Dal
- ½ tsp Cumin Seeds
- Salt to taste
- 1 sprig Curry Leaves
- 1 Dry Red Chili
Preparation Time: 10 minutes
Cooking Time: 20 minutes
Instructions:
- Wash and peel the beetroots. After peeling, chop them into small pieces.
- Steam the beetroot pieces until soft or alternatively, cook them in a saucepan with water until tender. Discard the water and set the cooked beetroot aside.
- Heat oil in a pan. Once hot, add cumin seeds, chana dal, urad dal, curry leaves, and dry red chili. Sauté until the dals turn golden brown.
- Add the cooked beetroot pieces and salt. Stir and cook for an additional 1-2 minutes.
- Turn off the heat and serve.
Serve Andhra Style Beetroot Vepudu with tomato-onion sambar, rice, and papad for a complete lunch.
