Andhra Style Beetroot Vepudu Recipe

Ingredients:

  • 3 Beetroots (chopped)
  • 2 tbsp Oil
  • 1 tbsp Chana Dal
  • 1 tbsp White Urad Dal
  • ½ tsp Cumin Seeds
  • Salt to taste
  • 1 sprig Curry Leaves
  • 1 Dry Red Chili

Preparation Time: 10 minutes

Cooking Time: 20 minutes

Instructions:

  1. Wash and peel the beetroots. After peeling, chop them into small pieces.
  2. Steam the beetroot pieces until soft or alternatively, cook them in a saucepan with water until tender. Discard the water and set the cooked beetroot aside.
  3. Heat oil in a pan. Once hot, add cumin seeds, chana dal, urad dal, curry leaves, and dry red chili. Sauté until the dals turn golden brown.
  4. Add the cooked beetroot pieces and salt. Stir and cook for an additional 1-2 minutes.
  5. Turn off the heat and serve.

Serve Andhra Style Beetroot Vepudu with tomato-onion sambar, rice, and papad for a complete lunch.
