Asafoetida (Hing) 1/2 teaspoon
Methi Powder (Fenugreek Powder) 1/2 teaspoon

Instructions:

  1. Prep the Chillies: Start by removing the stalks from the fresh red chillies. Wash them thoroughly and pat them dry with a kitchen towel.

  2. Fry the Chillies: In a heavy-bottomed pan, heat a small amount of oil over medium heat. Add the fresh red chillies and fry them for about 2 minutes, ensuring they don’t burn but are well cooked. Once fried, remove them from the pan and set aside to cool.

  3. Grind the Chutney: Once the fried chillies have cooled down to room temperature, transfer them into a grinder. Add the tamarind paste and grind them together until you achieve a smooth texture, adjusting the consistency to your preference. Scrape the sides of the grinder as needed. Try to avoid adding much water to maintain the richness of the chutney.

  4. Prepare the Tempering: In the same pan, heat 2 tablespoons of gingelly oil. Once the oil is hot, add the mustard seeds. Let them crackle for a few seconds. Then, add the asafoetida and cook for another 10 seconds.

  5. Combine and Cook: Add the ground red chilli and tamarind paste mixture into the pan with the tempering. Let it cook for about a minute, allowing the flavors to meld together. Stir occasionally to prevent sticking.

  6. Cool and Store: Turn off the heat and allow the Pandu Mirapakaya Pachadi to cool completely. Once cooled, transfer it to an airtight container and store it in the refrigerator.
