Andhra Chama Dumpa Pulusu (Arbi in Sesame Tamarind Sauce)

Ingredients:
- 250 grams Arbi (Taro root)
- 2 teaspoons Tamarind paste
- 4 Green chillies, chopped
- 3 tablespoons Sesame seeds (white)
- Salt, to taste
- Oil, as needed
- ½ teaspoon Mustard seeds
- ½ teaspoon Cumin seeds
- ¼ teaspoon Turmeric powder
- A few Curry leaves
- A few Coriander leaves, chopped

Instructions:
- Begin by peeling and chopping the arbi (taro root). In a saucepan, add the arbi with water and cook it until soft.
- Soak the tamarind in water for 10 minutes, then extract the pulp.
- In a small pan, dry roast the sesame seeds until they turn golden brown. Allow them to cool, then grind them in a blender to a fine powder.
- Heat oil in a pan. Add mustard seeds and cumin seeds. Sauté them for about 10 seconds until they start to splutter.
- Add the turmeric, chopped green chillies, and curry leaves. Sauté for another 15 seconds.
- Add the cooked arbi and let it cook for 2 minutes, stirring occasionally.
- Now, add the tamarind pulp mixture and salt. Mix well.
- Stir in the sesame powder and cook for an additional 2 minutes to combine all the flavors.
- Turn off the heat and garnish with chopped coriander leaves.
