Andhra Chama Dumpa Pulusu (Arbi in Sesame Tamarind Sauce)

Ingredients:

  • 250 grams Arbi (Taro root)
  • 2 teaspoons Tamarind paste
  • 4 Green chillies, chopped
  • 3 tablespoons Sesame seeds (white)
  • Salt, to taste
  • Oil, as needed
  • ½ teaspoon Mustard seeds
  • ½ teaspoon Cumin seeds
  • ¼ teaspoon Turmeric powder
  • A few Curry leaves
  • A few Coriander leaves, chopped

Preparation Time: 20 minutes
Cook Time: 20 minutes

Instructions:

  1. Begin by peeling and chopping the arbi (taro root). In a saucepan, add the arbi with water and cook it until soft.
  2. Soak the tamarind in water for 10 minutes, then extract the pulp.
  3. In a small pan, dry roast the sesame seeds until they turn golden brown. Allow them to cool, then grind them in a blender to a fine powder.
  4. Heat oil in a pan. Add mustard seeds and cumin seeds. Sauté them for about 10 seconds until they start to splutter.
  5. Add the turmeric, chopped green chillies, and curry leaves. Sauté for another 15 seconds.
  6. Add the cooked arbi and let it cook for 2 minutes, stirring occasionally.
  7. Now, add the tamarind pulp mixture and salt. Mix well.
  8. Stir in the sesame powder and cook for an additional 2 minutes to combine all the flavors.
  9. Turn off the heat and garnish with chopped coriander leaves.

Serve your Andhra Chama Dumpa Pulusu with a side of Beetroot Pachadi and Phulkas for a complete, satisfying meal.
