  1. Boil the Arbi (Colocasia Root):
    To start, wash the Arbi thoroughly. Place the Arbi in a pressure cooker along with 1/2 cup of water and a pinch of salt. Cook the Arbi for about 4 whistles and then turn off the flame. Let the pressure release naturally. Once the pressure has released, drain the water and set the Arbi aside to cool.

    Once the Arbi is cool enough to handle, peel the skin off the Arbi and cut it into thick slices. Set the sliced Arbi aside.

  3. Prepare the Masala Coating:
    In a mixing bowl, combine the red chilli powder and coriander powder. Add the sliced Arbi pieces and toss them well so the masala evenly coats each piece. Allow the Arbi to rest for 15 to 30 minutes to absorb the flavors.

  4. Prepare the Roasted Gram Dal Spice Powder:
    In a mixer or food processor, add the roasted gram dal (Pottukadalai), cumin powder (Jeera), and garlic cloves. Grind these ingredients together into a coarse spice mix. The freshly ground masala is ready to use.

  5. Preheat the Oven:
    Preheat your oven to 180°C (350°F). Line a baking tray with a little oil or use parchment paper to prevent sticking.

  6. Coat the Arbi and Arrange on the Tray:
    Roll each piece of marinated Arbi in the freshly ground spice powder, making sure it’s well coated. Arrange the coated Arbi pieces on the prepared baking tray, leaving a little space between each piece for even cooking.

  7. Bake the Arbi:
    Brush the Arbi pieces lightly with oil and place the tray in the preheated oven. Bake for 20 to 30 minutes, turning the pieces every 8-10 minutes to ensure they bake evenly on all sides. The Arbi should become golden brown and crispy on the edges when fully cooked.
