Turmeric powder (Haldi) 1/2 teaspoon

Instructions

  1. Pressure Cooking the Vegetables:
    Begin by pressure cooking the cauliflower and potatoes in a pressure cooker. Add 1 cup of water and a pinch of salt, and cook for one whistle. Once the pressure is released naturally, set the vegetables aside.

  2. Tempering the Spices:
    Heat a kadai (deep frying pan) and add a bit of oil. Once hot, add mustard seeds and let them splutter for a few seconds. Add the curry leaves and let them crackle for another 10 seconds, releasing their aroma.

  3. Sautéing Onions, Garlic, and Green Chilies:
    Add the chopped onions, slit green chillies, and chopped garlic to the kadai. Sauté the mixture until the onions turn soft and translucent.

  4. Cooking Tomatoes:
    Next, add the chopped tomatoes and a pinch of salt. Continue sautéing until the tomatoes become soft and mushy, with their raw smell completely cooked out.

  5. Adding the Cooked Vegetables and Spices:
    Add the cooked cauliflower and potatoes to the kadai. Sprinkle in the garam masala powder, red chilli powder, coriander powder, and turmeric powder. Mix everything thoroughly so that the vegetables are well coated with the spices.

  6. Simmering:
    Cover the kadai with a lid and let the koora simmer for an additional 2 minutes. This will help the spices meld with the vegetables.

  7. Final Seasoning:
    Open the lid and check for salt. Adjust according to your preference, and mix well.

  8. Serving Suggestions:
