Instructions:

  1. Roast the Sesame Seeds:
    Start by roasting the sesame seeds (til) in a dry pan over low heat. Stir frequently until the seeds turn golden brown. Once done, allow them to cool to room temperature.

  2. Grind the Sesame and Coconut Mixture:
    Once cooled, transfer the sesame seeds into a grinder. Add the grated fresh coconut and jaggery. Grind them into a coarse powder and set aside for later use.

  3. Prepare the Green Chilli Paste:
    In a mixer, blend the green chillies along with the turmeric powder to form a smooth paste. Set this aside.

  4. Pressure Cook the Vegetables:
    In a pressure cooker, add the diced sweet potatoes, potatoes, carrots, and chopped avarekai (broad beans). Add 1/4 cup of water, close the lid, and cook for 3 to 4 whistles. Once done, turn off the heat and release the pressure immediately.

  5. Temper the Spices:
    Heat 1 tablespoon of sunflower oil in a heavy-bottomed pan over medium heat. Add the mustard seeds, cumin seeds, and curry leaves. Let the mustard seeds crackle and the curry leaves release their aroma.

  6. Combine the Coconut-Sesame Mix and Green Chilli Paste:
    Add the coconut, sesame, and jaggery mixture into the pan. Stir well, and then add the ground green chilli paste. Saute for a minute or two, allowing the raw flavor of the green chillies to cook off.

  7. Add the Cooked Vegetables:
    Now, add the cooked vegetables to the pan with the spice and coconut mixture. Stir the mixture gently to combine all the ingredients. Let it cook for another couple of minutes, ensuring that any moisture released from the jaggery evaporates and the vegetables are evenly coated with the flavorful mixture.

  8. Adjust the Seasoning:
    Taste the dish and adjust the salt and spices as needed.

  9. Serve:
