Andhra Style Tamati Pachadi (Tomato Chutney)

This tangy and spicy chutney is made with ripe tomatoes cooked with traditional South Indian spices and tempered with mustard seeds and garlic. - 1 kg tomatoes, chopped
- 8 dried red chillies (adjust to taste)
- 1 tbsp tamarind paste
- 2 tsp red chilli powder
- 1/2 tsp turmeric powder
- 1 tbsp mustard seeds
- 1 tsp fenugreek seeds
- 8 cloves garlic, crushed
- Oil, as needed
- Salt, to taste

Prepare the Tomatoes:
Start by washing and chopping the tomatoes into small pieces. Heat a pan, add the tomatoes along with salt, turmeric powder, and tamarind paste. Cook on medium heat until the tomatoes soften and become pulpy, stirring occasionally. -
Prepare the Masala:
In a separate pan, heat a little oil. Add the mustard seeds and fenugreek seeds, and cook them for about 10 seconds. Then, add the dried red chillies and cook for another 20 seconds until the chillies become slightly charred. Turn off the heat and allow the mixture to cool slightly. Once cooled, grind this mixture into a fine paste using a mixer or grinder. -
Mix the Masala with Tomatoes:
Add the ground masala to the cooked tomatoes and mix well. If you prefer more spice, you can add red chilli powder at this stage. -
Prepare the Tempering:
In the same pan, heat a little more oil. Add the crushed garlic and mustard seeds, frying them until the garlic turns golden brown. Turn off the heat and allow the tempering to cool down. -
Final Mixing:
Once the tempering cools, pour it over the prepared tomato pachadi and mix everything together. -
Serving:
Serve your Andhra-style tomato pachadi warm with ghee roast dosa, rice, or even with a delicious kirai sambar for a hearty lunch.
