Ingredients:
For the Egg:
- 2 Whole Eggs
- 1/2 inch Ginger, finely chopped
- Black pepper powder, to taste
- Salt, to taste
For the Stuffing:
- 1 inch Ginger, finely chopped
- 4 cloves Garlic, finely chopped
- 1 Onion, finely chopped
- 1/4 cup Rice, boiled
- 1 tablespoon Soy sauce
- 1 tablespoon Red Chilli sauce
- 1/2 teaspoon Sugar
- 2 sprigs Spring Onion (Bulb & Greens)
- Salt and Pepper, to taste
- Oil, for cooking

Prepare the Rice Stuffing:
Begin by cooking the rice in a pressure cooker until half done. Once the pressure is naturally released, set it aside.
Heat a small skillet and add oil. Then, add the finely chopped ginger, garlic, and onion. Fry for a few minutes until fragrant.
Add the soy sauce, red chili sauce, and sugar, and stir well.
Toss the cooked rice into the skillet, season with salt and pepper, and stir to combine. Finally, toss in the spring onions. Set the rice stuffing aside. -
Prepare the Egg Mixture:
Crack the 2 eggs into a bowl, season with salt and pepper, and add chopped ginger. Beat the mixture until it’s well combined. -
Cook the Egg Dumplings:
Heat a small skillet with a little oil. Pour about two tablespoons of the egg mixture into the center of the skillet and spread it out into a small circle.
Once the egg forms a thin layer, spoon a tablespoon of the rice mixture onto one side of the egg circle. Fold the egg over to cover the rice and cook for another 10 seconds.
Repeat with the remaining egg mixture and rice stuffing. -
