Ingredients:

  • 2 tablespoons butter
  • 1 onion, chopped
  • 3 granny smith apples, peeled, cored, and chopped
  • 4 cups red cabbage, thinly sliced
  • 2 teaspoons caraway seeds
  • 3 cups beef broth
  • 2 tablespoons dry red wine
  • 2 tablespoons honey
  • 1 tablespoon sour cream (plus extra for serving)
  • 1 tablespoon fresh parsley, chopped
  • Salt and pepper to taste

Instructions:

Step Description
1 In a heavy large pot, melt the butter over medium-high heat.
2 Add the chopped onion and sautΓ© for about 5 minutes until soft and translucent.
3 Reduce the heat to medium, then add the chopped apples to the pot. SautΓ© for approximately 4 minutes, or until the apples are tender.
4 Stir in the thinly sliced red cabbage and continue to sautΓ© for about 6 minutes, or until the cabbage has softened slightly.
5 Add the caraway seeds to the pot and stir for 1 minute to release their aroma.
6 Pour in the beef broth, dry red wine, and honey, stirring to combine all the ingredients.
7 Increase the heat and bring the soup to a boil. Once boiling, reduce the heat to medium-low, cover the pot, and let the soup simmer for 30 minutes to allow the flavors to meld together.
8 After 30 minutes, uncover the pot and continue to simmer the soup for another 30 minutes to further develop the flavors.
9 Season the soup with salt and pepper to taste, adjusting the seasoning as needed.
10 To serve, ladle the hot soup into bowls and top each serving with a dollop of sour cream.
11 Garnish with freshly chopped parsley for a pop of color and added freshness.
12 Enjoy your Red Cabbage, Apple, and Caraway Soup piping hot, accompanied by crusty bread or your favorite crackers for a satisfying meal that’s perfect for chilly winter days!
