  • Cook Time: 20 minutes
  • Prep Time: 35 minutes
  • Total Time: 55 minutes
  • Servings: Approximately 24 4-inch pancakes

Ingredients:

Quantity Ingredient
1 1/2 cups unbleached all-purpose flour
1/2 cup whole wheat flour
2 tablespoons sugar
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
2 apples, diced
3/4 cup raisins
2 cups buttermilk
3 eggs, separated
2 tablespoons unsalted butter, melted
1 teaspoon vanilla extract
1/2 cup sugar
2 tablespoons cornstarch
2 cups apple cider
1 cinnamon stick
1 pinch ground nutmeg

Instructions:

For the Apple Cider Syrup:

  1. In a saucepan, combine 1/2 cup sugar and cornstarch, stirring until well blended.
  2. Gradually pour in the apple cider, stirring continuously.
  3. Add the cinnamon stick and bring the mixture to a boil over medium heat, stirring frequently.
  4. Reduce the heat, cover, and let it simmer for about 10 minutes.
  5. Once done, remove the saucepan from heat and sprinkle a pinch of ground nutmeg over the syrup.
  6. Before serving, don’t forget to remove the cinnamon stick.

For the Pancakes:

  1. In a large mixing bowl, sift together the unbleached all-purpose flour, whole wheat flour, sugar, baking soda, ground cinnamon, and salt.
  2. Add diced apples and raisins to the dry ingredients, tossing gently to coat them evenly.
  3. In another bowl, mix together buttermilk, egg yolks, melted butter, and vanilla extract until well combined.
  4. In a separate bowl, beat the egg whites until soft peaks form.
  5. Gently fold the buttermilk mixture into the dry ingredients until just moistened.
  6. Carefully fold in the beaten egg whites until just blended, being careful not to overmix.
  7. Heat a large skillet over medium heat and either spray with non-stick cooking spray or lightly brush with vegetable oil.
  8. Pour about 1/4 cup of batter onto the skillet for each pancake, adjusting the heat to medium-low.
  9. Cook until the tops are covered with small bubbles and the bottoms are golden brown, then carefully flip the pancakes and cook until lightly browned on the other side.
  10. Repeat the process with the remaining batter until all pancakes are cooked.
