Instructions:
For the Apple Cider Syrup:
- In a saucepan, combine 1/2 cup sugar and cornstarch, stirring until well blended.
- Gradually pour in the apple cider, stirring continuously.
- Add the cinnamon stick and bring the mixture to a boil over medium heat, stirring frequently.
- Reduce the heat, cover, and let it simmer for about 10 minutes.
- Once done, remove the saucepan from heat and sprinkle a pinch of ground nutmeg over the syrup.
- Before serving, don’t forget to remove the cinnamon stick.
For the Pancakes:
- In a large mixing bowl, sift together the unbleached all-purpose flour, whole wheat flour, sugar, baking soda, ground cinnamon, and salt.
- Add diced apples and raisins to the dry ingredients, tossing gently to coat them evenly.
- In another bowl, mix together buttermilk, egg yolks, melted butter, and vanilla extract until well combined.
- In a separate bowl, beat the egg whites until soft peaks form.
- Gently fold the buttermilk mixture into the dry ingredients until just moistened.
- Carefully fold in the beaten egg whites until just blended, being careful not to overmix.
- Heat a large skillet over medium heat and either spray with non-stick cooking spray or lightly brush with vegetable oil.
- Pour about 1/4 cup of batter onto the skillet for each pancake, adjusting the heat to medium-low.
- Cook until the tops are covered with small bubbles and the bottoms are golden brown, then carefully flip the pancakes and cook until lightly browned on the other side.
- Repeat the process with the remaining batter until all pancakes are cooked.
