Ingredients:

750 g Leg of lamb
1 Apricots
1 Onion
1 tbsp Olive oil
2 cloves Garlic
1/4 cup Satay sauce
2 tsp Curry powder
2 tbsp White vinegar
1/4 cup Honey
1 tbsp Light soy sauce
1/4 cup Coconut
1 tbsp Lime juice

Instructions:

  1. Cut lamb into 1″ cubes.

  2. Blend (or process) apricots and onion until smooth.

  3. Combine the lamb, apricot mixture, and remaining ingredients in a bowl, ensuring the lamb is evenly coated with the marinade.

  4. Cover and refrigerate overnight to allow the flavors to meld together and the lamb to tenderize.

  5. ‘Thread’ lamb cubes onto skewers, ensuring they are evenly spaced.

  6. BBQ lamb until tender, brushing occasionally with apricot mixture during cooking to enhance the flavor and keep the meat moist.
