Apricot Walnut Tea Bread Recipe

Ingredients:

  • 1 cup dried apricots, chopped
  • 1 1/2 cups boiling water
  • 2 1/2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup granulated sugar
  • 1/2 cup vegetable oil
  • 1 cup walnuts, chopped

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch loaf pan.

  2. In a medium bowl, place the chopped apricots and pour the boiling water over them. Allow to cool to room temperature.

  3. Sift together the flour, baking powder, and salt in a separate bowl. Set aside.

  4. In a large mixing bowl, beat together the egg, vanilla extract, sugar, and vegetable oil until well blended.

  5. Gradually add the cooled apricot mixture to the egg mixture, beating constantly.

  6. Add the sifted flour mixture to the batter, beating until smooth.
