Instructions:

Prepare the Dough:
- Start by softening the butter. Once softened, place it in the bowl of a stand mixer fitted with the paddle attachment.
- Mix the butter until smooth, then stop the machine and add the powdered sugar. Stir well to combine.
- Slice the vanilla bean lengthwise, scrape out the seeds, and add them to the mixture.
- Sift in the all-purpose flour, then add the orange zest and a pinch of salt. Use a spatula to mix until the dough starts to come together.
- Roll the dough into a rectangle, about 20 x 40 cm in size, and cover it with a sheet of parchment paper. Place it in the fridge for about 1 hour to firm up.

Prepare the Apricots:
- If using canned apricots, drain them from the syrup. If you’re using dried apricots, soak them in warm water to rehydrate, then gently squeeze out the excess water and remove the pit. If fresh apricots are in season, small ones will work perfectly.

- Once the dough is chilled and firm, cut it into 8 equal squares.
- Place half an apricot in the center of each square and fill it with half a sugar cube. Fold the dough around the apricot and seal the edges, ensuring the apricot is completely enclosed.
- Wrap each canederlo in plastic wrap and refrigerate for 30 minutes.

- In the meantime, prepare the chocolate sauce by finely chopping the dark chocolate.
- Heat the fresh cream in a saucepan over low heat, and once warm, add the chopped chocolate. Stir continuously until a smooth and thick chocolate sauce forms. Remove from heat and set aside.

- Bring a large pot of salted water to a boil. Carefully drop the canederli into the boiling water, four at a time, and simmer for about 10 minutes until they float to the surface and become firm.
- Use a slotted spoon to remove the canederli and set them aside to drain.

- In a shallow dish, combine the breadcrumbs, brown sugar, and cinnamon. Roll each canederlo in this mixture, ensuring they are evenly coated.
