Ingredients:

  • 1 3/4 cups oat bran
  • 1 cup all-purpose flour
  • 1/2 cup chopped dried apricots
  • 1 teaspoon baking powder

  • 1 egg
  • 1/2 cup skim milk
  • 1/4 cup honey

Instructions:

Step Description
1 Preheat your oven to 425Β°F (220Β°C).
2 In a large mixing bowl, combine the oat bran, all-purpose flour, chopped dried apricots, baking powder, 1/4 cup of brown sugar, and ground cinnamon.
3 In a separate bowl, beat the egg with 2 tablespoons of brown sugar until fluffy and light.
4 Warm up the skim milk until it is lukewarm, then dissolve the honey in it.
5 Mix the warmed milk, beaten egg mixture, vegetable oil, and vanilla extract together.
6 Blend the wet ingredients with the dry ingredients until well combined. If the mixture seems too thick, you can add a bit more skim milk to adjust the consistency.
7 Line a muffin pan with paper baking cups.
8 Fill each muffin cup about 2/3 full with the muffin batter.
9 Sprinkle the tops of the muffins with the remaining 2 tablespoons of brown sugar.
10 Bake in the preheated oven for 18 to 20 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.
11 Remove the muffins from the oven and let them cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
12 These muffins are best served warm. To retain moisture, store them in a plastic bag. You can also reheat them in the microwave if desired.
