Ingredients
For the Paste:
- 1 ounce shallots
- 4 large garlic cloves
- 1 1/2 candlenuts
- 1 cm turmeric
- 1 cm ginger
- 1 1/2 tsp white pepper
- 2 1/2 cm cinnamon stick
- 2 star anise
- 1/2 nutmeg
For the Whole Spices:

- 3 cm galangal (bruised)
- 3 cardamom pods
- 1 lemongrass stalk (bruised)
- 3 kaffir lime leaves
- 3 Indonesian bay leaves (daun salam)
- 2 cloves
Additional Ingredients:
- Salt to taste
- Bouillon powder to taste
- 1/2 tbsp sugar
- 3 1/2 liters water
- 100 ml vegetable oil for sautéing
- 300 grams beef, cubed
- 5 potatoes, cubed
- 2 carrots, sliced
- 2 leeks, sliced
- 5 large celery stalks, chopped
- Fried shallots, for garnish

Prepare the Ingredients:
Begin by gathering all the ingredients. Crush the paste ingredients into a fine paste using a food processor or a mortar and pestle. -
Sauté the Spices:
Heat the vegetable oil in a large pot over medium heat. Add the paste and the whole spices (galangal, cardamom, lemongrass, kaffir lime leaves, bay leaves, and cloves) to the pot. Sauté until the aroma is released and the spices are well-cooked, ensuring the fragrance fills your kitchen. -
