Sup Kemangi Ikan Patin (Catfish Basil Soup)

Ingredients:

  • 10 pieces of fresh catfish (ikan patin)
  • 3 bunches of fresh basil leaves (daun kemangi)
  • 10 shallots, sliced thinly
  • 5 cloves of garlic, minced
  • 20 green chilies (cabe ijo), sliced
  • 4 green tomatoes, chopped
  • 2 green onions (daun bawang), chopped
  • 2 stalks of lemongrass, bruised
  • 5 kaffir lime leaves (daun jeruk)
  • 3 Indonesian bay leaves (daun salam)
  • 3 cm galangal (laos), sliced
  • 1 packet of beef-flavored seasoning (masako rasa sapi)
  • 2 tablespoons of salt
  • 3 tablespoons of cooking oil
  • Approximately 1000 ml of water

Preparation Steps:

  1. Sautรฉing the Aromatics: Begin by heating the cooking oil in a large pot over medium heat. Add the sliced shallots, minced garlic, sliced green chilies, galangal, bruised lemongrass, Indonesian bay leaves, kaffir lime leaves, and chopped green tomatoes. Sautรฉ until fragrant and the shallots are translucent.
  2. Adding Water: Pour in approximately 1000 ml of water into the pot. Stir well and bring the mixture to a boil.
  3. Cooking the Catfish: Once the water is boiling, carefully add the cleaned catfish pieces and the chopped green onions. Stir gently to combine.
  4. Seasoning: Add the salt and the beef-flavored seasoning packet (masako rasa sapi) to the pot. Stir well to ensure the seasonings are evenly distributed.
  5. Incorporating Basil Leaves: Add the washed basil leaves to the pot. Stir gently and allow the soup to simmer until the catfish is cooked through and the flavors have melded together.
  6. Final Adjustments: Taste the soup and adjust the seasoning as necessary. Once the soup is well-flavored and the catfish is tender, remove the pot from the heat.
