Sup Ikan Patin (Indonesian Patin Fish Soup) 🐟

Ingredients:

Ingredient Quantity
Patin fish, cut into pieces, cleaned 1 kg
Bay leaves A few leaves
Kaffir lime leaves A few leaves
Lemongrass stalk, smashed 1 stalk
Powdered broth (optional) To taste
Cabbage, chopped To taste
Water As needed
Spice paste (bumbu halus)
Red shallots 8 cloves
Garlic 5 cloves
Candlenuts (kemiri) 3 nuts
Fresh turmeric (kunyit), peeled 2-inch piece
Fresh ginger (jahe), peeled 1-inch piece
Salt To taste

Instructions:

  1. Prepare the Spice Paste (Bumbu Halus):
    Start by blending or grinding the shallots, garlic, candlenuts, turmeric, and ginger into a smooth paste. Set it aside.

  2. Sauté the Aromatics:
    In a large pot, heat a little oil and sauté the spice paste along with the bay leaves, kaffir lime leaves, and smashed lemongrass stalk until fragrant. This will release all the wonderful flavors.

  3. Cook the Fish:
    Add the fish pieces to the pot, followed by enough water to cover them. Allow the fish to cook gently, stirring occasionally.

  4. Add Cabbage and Season:
    Once the fish is half-cooked, add the chopped cabbage and powdered broth (if using). Stir well to combine, and adjust the seasoning with salt to taste.

  5. Simmer to Perfection:
    Let the soup simmer until the fish is cooked through and the cabbage is tender. Taste and adjust seasoning if necessary.
