Instructions:

  1. Prepare the Rice: Begin by thoroughly washing the basmati rice. Fill a bowl with cold water, submerge the rice, and gently rub it between your fingers. Drain the starchy water and refill the bowl with fresh water. Repeat this process until the water runs clear. Drain the rice in a sieve and set it aside to dry.

  2. Sauté the Spices: In a wide, heavy-bottomed pan, heat the ghee over medium heat. Add the whole spices — cumin seeds, cassia bark, cloves, cardamom pods, and star anise. Allow them to sizzle and release their fragrance, which should only take about 30 seconds.

  3. Cook the Onions and Garlic: Stir in the finely sliced onion, and sauté for a minute or two until they soften and begin to turn golden. Add the sliced garlic, and cook for an additional minute, allowing the garlic to become fragrant and slightly golden.

  4. Add the Ginger, Cashews, and Raisins: Just as the garlic reaches its perfect golden color, stir in the julienned ginger, cashew nuts, and raisins (if using). Allow them to gently toast, which should take another minute.

  5. Combine Rice and Water: Add the washed rice to the pan, stirring gently to coat it with the fragrant spices and ingredients. Then, pour in the cold water (500 ml or 2 mugs), making sure the rice is submerged. Stir in the salt to taste.

  6. Bring to a Boil: Turn the heat up and bring the water to a vigorous rolling boil. Once the boil is reached, reduce the heat to its lowest setting and cover the pan with a tight-fitting lid.

  7. Simmer: Let the rice simmer on low for 10 minutes without lifting the lid. This step is crucial for the rice to cook perfectly and absorb all the flavors.

  8. Rest the Rice: After 10 minutes, remove the pan from the heat but leave the lid on. Let the rice sit, undisturbed, for an additional minute. This allows any remaining steam to settle.

  9. Fluff and Serve: Finally, remove the lid and gently fluff the rice with a fork. Be careful not to stir too vigorously — just gently turn the rice to ensure the grains remain light and fluffy.
