Instructions
- In a large mixing bowl, combine the drained white mushrooms, mashed tofu, halved green tomatoes, bay leaves, kaffir lime leaves, and bruised lemongrass.
- Add the blended spices—red onions, garlic, turmeric, and large chili pepper—along with sugar and salt. Mix thoroughly until all ingredients are well incorporated, adjusting the seasoning to your preference.
- Lay out banana leaves and spoon the mixture onto each leaf, folding it securely to create packets.
- Place the packets in a steamer and steam for approximately 30 minutes, allowing the flavors to meld together beautifully.
