Ingredients

Tofu 250g, mashed
Green tomatoes 4, halved
Bay leaves 2
Kaffir lime leaves 3
Lemongrass 1 stalk, bruised
Spices (ground)
Red onions 3, blended
Garlic 4 cloves, blended
Turmeric 1 tsp, blended
Large chili pepper 1, seeds removed, blended
Sugar 1 tsp
Salt to taste

Instructions

  1. In a large mixing bowl, combine the drained white mushrooms, mashed tofu, halved green tomatoes, bay leaves, kaffir lime leaves, and bruised lemongrass.
  2. Add the blended spices—red onions, garlic, turmeric, and large chili pepper—along with sugar and salt. Mix thoroughly until all ingredients are well incorporated, adjusting the seasoning to your preference.
  3. Lay out banana leaves and spoon the mixture onto each leaf, folding it securely to create packets.
  4. Place the packets in a steamer and steam for approximately 30 minutes, allowing the flavors to meld together beautifully.
