Instructions

  1. Prepare the Spice Paste: In a mortar and pestle or food processor, blend the shallots, garlic, and candlenut into a smooth paste.

  2. Mix the Ingredients: In a bowl, crumble the tofu and mix in the spice paste, anchovies, chopped red chili, scallions, bay leaves, lemongrass, and whole bird’s eye chili. Ensure everything is well combined.

  3. Marinate: Allow the mixture to rest for a few minutes, letting the flavors meld together.

  4. Wrap the Mixture: Take the banana leaves and cut them into squares. Place a generous portion of the tofu mixture in the center of each leaf, folding it into a neat parcel.
