Pepes Tahu: A Delightful Indonesian Steamed Tofu Dish

Instructions

  1. Prepare the Filling:
    In a large mixing bowl, combine the mashed tofu, matchstick-cut carrot, sliced green onions, eggs, and the spice paste made from shallots, garlic, lemongrass, and tomato. Add the sliced red chili and mix everything thoroughly. Taste the mixture and adjust the seasoning with salt, sugar, and flavor enhancer according to your preference.

  2. Wrap the Mixture:
    Take a piece of banana leaf and lay it flat. On top, place a few salam leaves and a stalk of smashed lemongrass. Spoon a portion of the tofu mixture onto the leaves, then carefully fold and wrap the banana leaf to encase the filling securely. Use toothpicks or bamboo skewers to hold the wrap in place, ensuring the filling doesn’t escape during steaming. Repeat this process until all the filling is used.

  3. Steam the Pepes Tahu:
    Place the wrapped pepes in a steamer basket lined with additional banana leaves, if desired. Steam the parcels over boiling water for about 30 minutes. The steaming will infuse the flavors while cooking the tofu and vegetables.

  4. Serve:
