Ayam Kemangi Bumbu Kuning: A Fragrant Indonesian Chicken Delight

Ingredients:

  • 700 grams chicken, cleaned and cut into pieces
  • 1 stalk lemongrass, bruised and tied in a knot
  • 3 kaffir lime leaves
  • 2 bay leaves
  • 1 packet chicken-flavored Royco seasoning
  • Cooking oil, as needed
  • 1 bunch of basil leaves
  • For the spice paste:
    • 10 shallots
    • 6 garlic cloves
    • 3 cm galangal
    • 3 cm turmeric

Instructions:

  1. Prepare the Chicken:

    • Rinse the chicken pieces thoroughly and cut them into your desired sizes. Set aside.
  2. Make the Spice Paste:

    • In a blender or mortar and pestle, grind together the shallots, garlic, galangal, and turmeric until a smooth paste forms. Set aside.
  3. Prepare the Basil:

    • Wash the basil leaves thoroughly and set them aside.
  4. Cook the Spices:

    • Heat a small amount of cooking oil in a pan over medium heat. Add the spice paste and sauté until fragrant.
    • Add the kaffir lime leaves, bay leaves, and lemongrass to the pan. Stir well until the spices release their oils and become aromatic.
  5. Cook the Chicken:

    • Add the chicken pieces to the pan, stirring to coat them well with the spices. Pour in a small amount of water to help cook the chicken.
    • Allow the mixture to simmer for 5-10 minutes.
  6. Season and Simmer:

    • Sprinkle in the chicken-flavored Royco seasoning and stir well. Let it simmer for an additional 5 minutes, or until the chicken starts to turn golden yellow.
  7. Adjust the Flavor:

    • Add salt and sugar to taste. Adjust seasoning as needed to suit your preference.
  8. Add Basil:

    • Gently stir in the basil leaves. Cook until the basil wilts and releases its aroma.
  9. Serve:

    • Remove the pan from heat. Transfer the dish to a serving platter and enjoy the rich, aromatic flavors of your Ayam Kemangi Bumbu Kuning.
