Apple vinegar 7g
Extra virgin olive oil 10g
Parmigiano Reggiano DOP (shaved) 40g

Black pepper (to taste) q.b.

Instructions

  1. Prepare the Artichokes:
    Start by cleaning the artichokes. Remove the tough outer leaves until you reach the tender ones. Use a small spoon to scrape out the fuzzy choke from the center, being careful to not discard any usable part. Once cleaned, place them in a bowl with a bit of apple vinegar to prevent browning.

  2. Sauté the Artichokes:
    In a pan, heat the olive oil over medium heat. Add the artichokes and sauté until they are tender and slightly golden. Season with a pinch of salt and black pepper to taste. Let the artichokes cool slightly.

  3. Heat the Piadine:
    Place a large skillet on the stove and heat it. Once hot, place the piadine (flatbreads) on the skillet. Toast them for about 1 minute on each side until they are warm and slightly crispy.

  4. Assemble the Piadina:
    Once the piadine are ready, spread ¼ of the sautéed artichokes onto each piadina. Add about 50g of culatello on top, layering it evenly. Finish with some shaved Parmigiano Reggiano to enhance the flavors.

  5. Fold and Serve:
    Carefully fold the piadine in half to close them. Serve warm and enjoy the delightful combination of flavors in each bite.
