Asian-Style Chicken Packets With Vegetables

Prep Time: 20 minutes
Cook Time: 18 minutes
Total Time: 38 minutes
Servings: 4

Ingredients:

  • 1/3 cup dry sherry or vermouth
  • 3 tablespoons low sodium soy sauce
  • 2 tablespoons vegetable oil
  • 1/4 cup chopped green onions
  • 1 tablespoon minced ginger
  • 1 clove garlic, minced
  • 4 boneless chicken breast halves
  • 1 red bell pepper, thinly sliced
  • 1 cup snow peas
  • 1 cup broccoli florets
  • 1 can (8 oz) water chestnuts, drained

Instructions:

  1. Preheat your oven to 450°F (230°C) or prepare a grill for medium-high heat.

  2. Prepare the Marinade: In a small bowl, combine the dry sherry or vermouth, low sodium soy sauce, vegetable oil, chopped green onions, minced ginger, and minced garlic. Mix well.

  3. Marinate the Chicken and Vegetables: Add the boneless chicken breast halves, sliced red bell pepper, snow peas, broccoli florets, and drained water chestnuts to the marinade. Toss everything together until evenly coated.

  4. Assemble the Packets: Tear off four 12-inch by 18-inch sheets of heavy-duty aluminum foil. Divide the chicken and vegetable mixture evenly among the sheets, placing each portion in the center.

  5. Seal the Packets: Bring up the sides of each foil sheet to meet in the center, then fold them over a couple of times to seal the packets securely.

  6. Cooking Options:

    • Oven Method: Place the foil packets on a baking sheet and bake in the preheated oven for 15-18 minutes, until the chicken is cooked through and the vegetables are tender.
    • Grill Method: Alternatively, you can grill the foil packets over medium-high heat for 12-14 minutes with the grill covered. This method adds a delicious smoky flavor.
  7. Serve: Carefully open the foil packets (watch out for steam) and transfer the contents to plates. Enjoy your Asian-style chicken and vegetable packets straight from the foil for easy cleanup and a beautiful presentation.

This Asian-inspired dish combines savory flavors with tender chicken and crisp vegetables, making it a perfect choice for a quick and flavorful dinner. It’s a great option for busy weeknights when you want something delicious without spending hours in the kitchen.
