Instructions

Step 1: Prepare the Dal

  1. Rinse the Dal: Start by rinsing the arhar dal thoroughly under cold water until the water runs clear.
  2. Pressure Cook: Place the dal in a pressure cooker, adding finely chopped onions, grated ginger, turmeric powder, salt, Indian bay leaf, and 2.5 cups of water. Stir well to combine.
  3. Cook: Secure the pressure cooker lid and cook the dal on high heat for 2 whistles. Afterward, reduce the heat and simmer for another 3-4 minutes to ensure the dal softens completely.
  4. Release Pressure: Turn off the heat and allow the pressure to release naturally. Once the pressure is fully released, open the lid and stir the dal gently to ensure a smooth consistency.

Step 2: Season and Finish

  1. Add Fresh Flavor: Transfer the dal to a serving bowl. Add the lemon juice and finely chopped fresh coriander, stirring to incorporate these fresh flavors.

Step 3: Prepare the Garlic Tadka

  1. Heat Ghee: In a small pan, heat the ghee over medium heat.
  2. Add Spices: Add cumin seeds, allowing them to crackle and release their aroma. Then add the crushed garlic cloves and whole red chilies, sautéing for about 15 seconds or until the garlic turns a light golden brown.
  3. Pour Over Dal: Immediately pour this garlic tadka over the prepared dal and mix lightly.
