Instructions

Step 1: Prepare the Dough

Start by sifting the Manitoba flour into a large mixing bowl, using a fine mesh sieve to ensure a light and airy texture. To this, add the salt and mix to combine. Gradually pour in the water, followed by the olive oil, while stirring gently to begin forming the dough.

Using your fingertips, start kneading the dough quickly. Since the dough does not require long kneading, you can work it for just a few minutes until the ingredients are incorporated and a rough dough begins to form.

Step 2: Rest the Dough

Once the dough is mixed, cover the bowl with a clean kitchen towel or plastic wrap and let the dough rest for 30 minutes at room temperature. This resting period will help the gluten relax, making it easier to shape the dough.

Step 3: Create the Folds

After the first rest, gently lift the outer edges of the dough and fold them toward the center. Repeat this folding process around the entire dough ball, performing a total of 8 folds. Once you’ve completed the folds, flip the dough over, sealing the folds, and form it into a smooth ball.

Cover the dough again and allow it to rest for another 30 minutes.

Step 4: Fold Again

After the second resting period, repeat the folding process once more. Again, lift and fold the outer edges toward the center, performing the same 8 folds. Afterward, flip the dough over, form it back into a ball, and cover it to rest for a final 30 minutes.

Step 5: Preheat the Oven and Prepare the Baking Sheets

While the dough rests for the final time, preheat your oven to 220ยฐC (428ยฐF) in static mode. Place your baking tray inside the oven to heat up, ensuring that it will be nice and hot when you are ready to bake the bread. Additionally, cut out three sheets of parchment paper that match the size of the baking tray.

Step 6: Shape the Dough

Once the dough has rested for the third time, divide it into three equal portions, each weighing approximately 120g. Take one portion and place it on a clean surface. Gently stretch and press the dough between your hands, using a gentle, pulling motion to elongate it into a rectangle. Use the backs of your hands to carefully stretch it out without tearing. You should aim to achieve a thin, rectangular shape about the size of your baking tray.

If any tears occur in the dough, simply press the edges back together to repair them. Continue to stretch the dough until it reaches the desired size. Once shaped, transfer the dough onto one of the prepared sheets of parchment paper.
