Heat Oil and Temper Spices:
In a pressure cooker, heat oil and add the whole spices—bay leaf, black cardamom, whole black pepper, green cardamom, cloves, and cinnamon stick. Let them sizzle for 2 minutes to release their aromatic flavors. -
Sauté Onions, Ginger, and Garlic:
Add the thinly sliced onions, chopped ginger, garlic, and green chilies to the cooker. Sauté the mixture until the onions turn golden brown. -
Add Vegetables:
Now, add the sliced potatoes, carrots, peas, cauliflower, and green beans. Stir and cook for about 5 minutes until the vegetables are slightly tender. -
Add Spices and Yogurt:

Once the cooker cools down, open the lid and fluff the rice. In a separate pan, heat some oil and fry the finely sliced onion until golden brown. Garnish the cooked taheri with these fried onions. -
