Ingredients:

Ginger (finely chopped) 1 inch
Garlic (finely chopped) 4 cloves
Yogurt 1/4 cup
Mint Leaves 2 sprigs
Fresh Coriander (chopped) 2 sprigs
Red Chili Powder 1 tsp
Coriander Powder 1 tsp
Turmeric Powder 1 tsp
Salt To taste
Oil As required
Whole Spices:
Bay Leaf 1
Black Cardamom 1
Whole Black Pepper 7 (crushed)
Green Cardamom 2
Cloves 3
Cinnamon Stick 1 inch

Preparation Time: 15 minutes

Cooking Time: 35 minutes

Instructions:

  1. Heat Oil and Temper Spices:
    In a pressure cooker, heat oil and add the whole spices—bay leaf, black cardamom, whole black pepper, green cardamom, cloves, and cinnamon stick. Let them sizzle for 2 minutes to release their aromatic flavors.

  2. Sauté Onions, Ginger, and Garlic:
    Add the thinly sliced onions, chopped ginger, garlic, and green chilies to the cooker. Sauté the mixture until the onions turn golden brown.

  3. Add Vegetables:
    Now, add the sliced potatoes, carrots, peas, cauliflower, and green beans. Stir and cook for about 5 minutes until the vegetables are slightly tender.

  4. Add Spices and Yogurt:
    Next, add the red chili powder, coriander powder, turmeric powder, and salt. Mix well, and then add the yogurt. Stir the mixture for 3-4 minutes and let it cook so the yogurt blends in and the spices infuse.

  5. Add Rice and Water:
    Add the basmati rice, 2 1/2 cups of water, and salt. Stir to combine all the ingredients. Close the pressure cooker and cook for 3 whistles, ensuring the rice is cooked properly.

  6. Garnish and Serve:
    Once the cooker cools down, open the lid and fluff the rice. In a separate pan, heat some oil and fry the finely sliced onion until golden brown. Garnish the cooked taheri with these fried onions.

  7. Serving:
    Serve the delicious Awadhi Style Taheri with a side of spinach raita and crispy papad. This makes for a satisfying lunch, full of rich flavors and textures.
