Indulge in the flavors of Bali with this exquisite Ayam Bumbu Betutu recipe, a traditional Indonesian dish known for its rich and aromatic spices. Perfect for family gatherings or a special dinner, this dish promises to bring a taste of Bali right to your dining table.

Ingredients

  • 1/2 free-range chicken (ayam kampung)
  • 10 shallots
  • 6 cloves garlic
  • 1 piece of galangal (approximately 1 inch)
  • 15 red bird’s eye chilies (cabe rawit merah)
  • 6 red chilies (cabe merah)
  • 5 candlenuts (kemiri)
  • Turmeric (to taste)
  • 1 teaspoon coriander seeds
  • 1 block of ABC brand shrimp paste (terasi)
  • 1 stalk lemongrass
  • 2 kaffir lime leaves (daun jaruk)
  • 2 Indonesian bay leaves (daun salam)

Steps

  1. Prepare the Spice Paste:

    • In a blender, combine the bird’s eye chilies, red chilies, shallots, garlic, candlenuts, coriander seeds, galangal, turmeric, and shrimp paste. Add a pinch of salt, sugar, and seasoning to taste. Blend until smooth.
  2. Clean and Cut the Chicken:

    • Wash the chicken thoroughly and cut it into pieces according to your preference.
  3. Sauté the Spice Paste:

    • Heat a pan over medium heat and add the blended spice paste. Sauté until the paste is cooked through and fragrant.
    • Add the lemongrass, kaffir lime leaves, and Indonesian bay leaves. Continue to sauté until the spices are well blended and aromatic.
  4. Cook the Chicken:

    • Add the chicken pieces to the pan and stir to coat them evenly with the spice paste.
    • Pour in enough water to cover the chicken and bring to a boil. Reduce the heat and let it simmer until the chicken is cooked through and the liquid has reduced and thickened, allowing the flavors to infuse into the chicken.
  5. Serve:

    • Once the chicken is tender and the sauce has thickened, transfer the Ayam Bumbu Betutu to a serving dish.
    • Garnish with additional fresh herbs or fried shallots, if desired.

Tips for the Perfect Ayam Bumbu Betutu

  • Use Fresh Ingredients: Fresh spices and herbs make a significant difference in the flavor of this dish.
  • Adjust the Spice Level: Feel free to adjust the number of chilies based on your heat tolerance.
  • Marinate for More Flavor: For an even richer taste, marinate the chicken in the spice paste for a few hours before cooking.

Enjoy this flavorful and aromatic Ayam Bumbu Betutu with steamed rice and a side of fresh vegetables or a simple salad. This traditional Balinese dish is sure to become a favorite in your culinary repertoire, bringing the vibrant tastes of Indonesia to your home.
