Ayam Bumbu Bali: A Flavorful Indonesian Chicken Delight

Ingredients:

  • 500 grams chicken, cut into 5 pieces
  • 5 shallots
  • 2 cloves garlic
  • 5 red bird’s eye chilies
  • 3 red curly chilies
  • 1 tomato
  • 1 cm ginger
  • 2 cm galangal
  • 2 kaffir lime leaves
  • 1.5 candlenuts
  • Brown sugar, to taste
  • Salt, to taste
  • Sweet soy sauce, to taste

Instructions:

  1. Prepare the Chicken: Start by boiling the chicken pieces with a pinch of salt for approximately 20 minutes, or until tender. This initial step will ensure that the chicken is cooked through and ready to absorb the flavorful spices.

  2. Make the Spice Paste: While the chicken is cooking, prepare the spice paste. Using a mortar and pestle or a food processor, grind the shallots, garlic, ginger, red bird’s eye chilies, red curly chilies, candlenuts, and tomato into a coarse paste. This mixture will form the base of the sauce.

  3. Sauté the Spice Paste: Heat a small amount of oil in a skillet over medium heat. Add the spice paste along with the brown sugar, kaffir lime leaves, and galangal (which should be crushed lightly). Sauté the mixture until fragrant and the oil begins to separate from the paste.

  4. Combine and Cook: Once the spice paste is aromatic, add the drained chicken pieces to the skillet. Stir the chicken to coat it well with the spice mixture. Gradually add some of the chicken broth from the boiling process to create a sauce, and adjust the seasoning with salt.

  5. Add Sweet Soy Sauce: Pour in the sweet soy sauce according to your taste preference. This will add a rich, sweet depth to the dish.

  6. Simmer and Serve: Let the chicken simmer in the sauce for a few more minutes, allowing the flavors to meld and the sauce to thicken slightly. Adjust seasoning as needed.
