Ingredients

For the Katli (Dumplings):

For the Gravy:

Ginger Garlic Paste 2 teaspoons
Turmeric Powder (Haldi) 1 teaspoon
Red Chilli Powder 1 teaspoon
Coriander Powder (Dhania) 1 teaspoon
Coriander Leaves (chopped) 4 sprigs
Garam Masala Powder 1/2 teaspoon
Homemade Tomato Puree 1/2 cup
Cumin Seeds (Jeera) 1 teaspoon
Salt As required
Water As required

Instructions

Preparing the Besan Katli (Dumplings):

  1. In a mixing bowl, combine gram flour (besan), finely chopped green chilli, garlic paste, turmeric powder, and a pinch of salt. Gradually add water and knead the mixture into a smooth and pliable dough.
  2. Shape the dough into long cylindrical rolls and cut them into small cubes or katli shapes.
  3. In a saucepan, bring water to a boil and gently drop the katli pieces into the boiling water. Allow them to cook for about 7–10 minutes, until they float to the surface.
  4. Remove the cooked dumplings using a slotted spoon and set them aside.

Preparing the Gravy:

  1. Heat ghee in a wok or deep pan over medium heat. Add cumin seeds and let them splutter.
  2. Stir in the finely chopped onions and sauté until they turn translucent and golden.
  3. Add the ginger garlic paste and sauté for another 2 minutes to release the flavors.
  4. Pour in the homemade tomato puree and cook for 3–4 minutes, stirring occasionally.
  5. Add turmeric powder, red chilli powder, coriander powder, garam masala powder, and salt to taste. Mix well and cook the masalas for another 2–3 minutes.
  6. Adjust the consistency of the gravy by adding water as required. Bring the mixture to a gentle boil and cook for an additional 5 minutes.

Final Assembly:

  1. Add the prepared Besan Katli dumplings to the gravy and stir gently to coat them evenly.
  2. Let the katli simmer in the gravy for 5 minutes, allowing them to absorb the flavors.
  3. Once cooked, switch off the heat and garnish the sabzi with freshly chopped coriander leaves.

Serving Suggestions

Serve the Besan Katli Ki Sabzi hot with steamed rice or soft, fluffy phulkas. This dish pairs beautifully with a side of tangy pickle or a refreshing cucumber raita to balance the rich flavors.
