Sayur Asem Betawi is a traditional Indonesian sour vegetable soup known for its refreshing tang and hearty flavors. This dish features tender beef, a variety of vegetables, and a tangy tamarind broth that combines to create a flavorful and satisfying meal. Ingredients

  • Beef: 250 grams (1/4 kg), cut into bite-sized pieces
  • Chayote: 1 medium, peeled and cut into chunks
  • Young Papaya: 1 piece, peeled and cut into chunks
  • Young Jackfruit: 1 piece, peeled and cut into chunks
  • Melinjo Nuts: 1 handful
  • Sweet Corn: 4 pieces, cut into segments
  • Long Beans: 1 handful, cut into pieces
  • Melinjo Leaves: A few leaves
  • Tomato: 1, cut into wedges
  • Tamarind Paste: 1 packet
  • Water: For boiling

Spices and Aromatics

  • Garlic: 10 cloves
  • Shallots: 5 cloves
  • Candlenuts: 4
  • Salt: To taste
  • Sugar: To taste
  • Galangal: 1 piece, sliced
  • Bay Leaves: 4 leaves

Instructions

  1. Prepare the Beef: Begin by boiling the beef with a pinch of salt in a pot of water until tender. Once cooked, remove the beef from the pot, set it aside, and discard the water or reserve it for later use. Cut the beef into bite-sized pieces.

  2. Blend the Spices: While the beef is cooking, blend the garlic, shallots, and candlenuts into a smooth paste.

  3. Cook the Broth: Return the reserved beef broth to the pot and bring it to a boil. Add the spice paste and stir well.

  4. Add Vegetables: Incorporate the melinjo nuts, young papaya, and sweet corn into the boiling broth. Let it simmer until the vegetables are tender.

  5. Add Remaining Ingredients: Once the vegetables are nearly done, add the chayote and the pre-cut beef pieces. Continue cooking until the chayote is just tender.

  6. Season the Soup: Add the bay leaves, melinjo leaves, and long beans. Stir in the tamarind paste and tomato wedges. Simmer briefly, then taste and adjust seasoning with salt and sugar as needed.

  7. Serve: Serve the Sayur Asem hot. This dish is perfect as a main course and pairs well with steamed rice.
