Ingredients

Ingredient Quantity
Milk 1 liter
Boondi 1 cup (sweet)
Cardamom powder 1/2 teaspoon
Rose water 1 teaspoon
Saffron A few strands
Almonds 10, soaked in hot water, peeled, and finely chopped

Preparation Time:

10 minutes

Cooking Time:

20 minutes

Instructions

  1. Blanch and Prepare Almonds:

    • Start by blanching the almonds. Soak them in hot water for about 10 minutes to loosen their skins. Once soft, peel the almonds and chop them finely. Set aside for later.
  2. Making Sweet Boondi (Optional):

    • If you’re making Boondi at home, you can follow a simple recipe for Meethi Boondi. However, you can also buy pre-made sweet Boondi from the store, which will save you time.
  3. Boiling the Milk:

    • In a large saucepan, pour 1 liter of milk and bring it to a boil over medium heat. Stir occasionally to prevent it from sticking to the bottom.
  4. Infuse Flavors:

    • Once the milk begins to boil, reduce the heat and add a few strands of saffron and 1/2 teaspoon of cardamom powder to the milk. Stir well to dissolve the saffron. Let the milk simmer for about 10 minutes, or until it reduces by half. This will thicken the milk and enhance its flavors.
  5. Add Rose Water and Boondi:

    • Turn off the heat once the milk has reduced and become creamy. Add 1 teaspoon of rose water and mix well. Then, add the soaked and chopped almonds, along with the sweet Boondi to the milk mixture. Stir everything together to ensure the Boondi is well coated in the milk.
  6. Final Touches and Serving:

    • Your Boondi Ki Kheer is now ready! You can serve it warm immediately or refrigerate it for a few hours for a chilled version. Chilled Boondi Ki Kheer is especially refreshing during hot weather.
  7. Serving Suggestions:

    • Serve Boondi Ki Kheer as a dessert on its own, or pair it with a delicious meal like Jaipuri Aloo Pyaaz Ki Sabzi and Ajwain Puri for a more complete Indian feast.

Pro Tip:
For an extra burst of flavor and texture, you can garnish your Boondi Ki Kheer with additional slivers of almonds or a few more strands of saffron. You can also adjust the sweetness according to your preference by adding more sugar when preparing the Boondi.

Enjoy this traditional, comforting dessert and share the rich tastes of India with your loved ones!
