Ingredients:
- 500 grams beef (I used 250 grams of shin and 250 grams of fatty beef)
- For the spice paste:
- 10 shallots
- 6 garlic cloves
- 1 thumb-sized piece of ginger
- 2 teaspoons toasted coriander
- 4 toasted candlenuts
- 2 thumb-sized pieces of grilled turmeric
- Salt to taste
- Sugar to taste
- 1/2 teaspoon ground pepper
- Mushroom seasoning (optional)
- For garnishing:
- Sliced scallions
- Chopped cilantro
- Boiled bean sprouts
- Fried shallots
- Shrimp crackers
- Lime wedges
- For the sambal:
- 30 red bird’s eye chilies, steamed or boiled until soft, then blended with a little hot water

Prepare the Beef:
- In a large pot, bring approximately 1.5 liters of water to a boil. Add the beef and cook for 5 minutes. Drain and discard the water. Refill the pot with fresh water and return the beef to it. Continue to simmer until the beef becomes tender.

- While the beef is cooking, prepare the spice paste. In a blender or food processor, combine the shallots, garlic, ginger, toasted coriander, candlenuts, and grilled turmeric. Blend until smooth.

- Heat a small amount of oil in a pan over medium heat. Add the spice paste and sauté until fragrant. Add the lime leaves and lemongrass, and continue to sauté until the mixture is aromatic.

- Add the cooked spice paste to the pot with the simmering beef. Season with salt, sugar, ground pepper, and mushroom seasoning if using. Adjust the seasoning to taste. Continue to cook until the beef is fully tender and the flavors are well absorbed.
