Opor Ayam is a cherished dish from East Java, known for its rich, creamy coconut sauce and aromatic spices. This traditional Indonesian recipe is perfect for those who appreciate the deep, complex flavors of Southeast Asian cuisine. Here’s how you can make this delicious dish:

Ingredients:

  • 500 grams chicken, cut into pieces (you can include chicken feet if desired, but they are optional)
  • 5 chicken feet (optional; if using, pre-boil until tender and then drain)
  • Spice Paste:
    • 7 shallots
    • 7 cloves garlic
    • 1 packet of terasi ABC (fermented shrimp paste)
    • 1 teaspoon coriander seeds
    • 5 candlenuts
  • Additional Ingredients:
    • 1 piece galangal, smashed
    • 2 stalks lemongrass, smashed
    • 2 bay leaves
    • 3 kaffir lime leaves
    • 65 ml coconut milk (Kara brand)
    • Salt, sugar, and seasoning to taste
    • 500-700 ml water
    • Fried shallots for garnish

Instructions:

  1. Prepare the Chicken:

    • Clean the chicken pieces thoroughly. If using chicken feet, it is advisable to pre-boil them until they become tender, then drain and set aside.
  2. Make the Spice Paste:

    • Blend the shallots, garlic, terasi ABC, coriander seeds, and candlenuts until you achieve a smooth paste.
  3. Cook the Spice Paste:

    • Heat a little oil in a pan over medium heat. Add the spice paste and cook until it becomes aromatic and slightly browned.
  4. Season the Paste:

    • Add salt, seasoning, and sugar to the cooked spice paste according to your taste preferences.
  5. Add the Chicken:

    • Add the cleaned chicken pieces to the pan and mix well with the spice paste. Pour in the water and bring the mixture to a boil.
  6. Simmer:

    • Reduce the heat and let it simmer until the chicken is cooked through and tender, and the liquid has reduced slightly.
  7. Add Coconut Milk:

    • In a separate bowl, mix the coconut milk with a bit of water. Pour this mixture into the pan with the chicken and stir well.
  8. Adjust Seasoning:

    • Taste and adjust the seasoning if necessary. Continue to cook until the sauce thickens and the flavors meld together.
  9. Finish and Serve:

    • Serve the opor ayam hot, garnished with fried shallots. It pairs beautifully with steamed rice or lontong (compressed rice cake).
