Ingredients

Red onions 320g
Dried red beans 140g
Leeks 200g
Spring onions 70g
Parsley 80g
Coriander 80g
Fenugreek seeds 15g
Ground turmeric 10g
Water 1 liter
Lime (for zest) 1
Extra virgin olive oil As needed
Salt To taste

Instructions

  1. Prepare the meat: Start by cutting the veal into 3-4 cm thick slices. Once sliced, cut the meat into bite-sized cubes.

  2. Prepare the vegetables: Peel and slice the red onions thinly. Wash the leek and finely slice only the green part. Do the same for the spring onions, using only the green parts. Wash and chop both the parsley and coriander finely.

  3. Cook the meat: In a large pot, add the cubed veal. Brown the meat over medium heat, stirring regularly with a wooden spoon to prevent sticking. Add salt to taste.

  4. Add beans: Once the meat has browned, add the dried red beans to the pot. Cover the pot and let it cook for a while, allowing the beans to soften.

  5. Toast the spices and herbs: In a separate pan, heat a small amount of extra virgin olive oil. Toast the fenugreek seeds for 2-3 minutes until fragrant. Then, add the chopped leek, spring onions, parsley, and coriander to the pan. Cook them until they soften and release their fragrance.

  6. Combine everything: Add the toasted herb and spice mixture to the pot with the meat and beans. Stir everything together. Next, add the grated zest of the lime to the pot, giving a nice citrusy twist to the dish.

  7. Simmer: Pour in the water and let the ghormeh sabzi simmer for about 1.5 to 2 hours, stirring occasionally, until the beans are tender and the flavors have melded together.

  8. Serve: Once ready, serve your ghormeh sabzi hot with steamed basmati rice on the side. The aromatic, savory stew, complemented by the tang of lime and the richness of the herbs, makes for a satisfying and hearty meal.
