Ingredients:

  • 1 Cup Basmati Rice
  • 1/2 Cup Ghee
  • 1 Cup Sugar
  • 1 Pinch Saffron Strands
  • 2 Tablespoons Mixed Nuts, crushed
  • 2 Tablespoons Sultana Raisins
  • 2 1/2 Cups Water
  • 1 Teaspoon Cardamom Powder (Elaichi)
  • 1 Pinch Salt

Preparation Time: 20 mins
Cooking Time: 20 mins

Instructions:

  1. Begin by washing the rice well with water 3-4 times. Let it soak in water for 20 minutes.
  2. In a saucepan, heat 1 tablespoon of ghee and fry the mixed nuts and raisins for a minute. Remove and set aside.
  3. In the same saucepan, add the remaining ghee, water, salt, and saffron. Stir and bring to a boil.
  4. Once the water boils, add the soaked rice. Mix well, cover the pan, and cook on medium heat. Ensure the lid is not fully covered to allow steam to escape. This prevents the water and rice from overflowing.
  5. After 5-6 minutes, the water will be absorbed. Reduce the heat to low and continue cooking until the rice is soft, stirring occasionally.
  6. Once the rice is cooked, add sugar, the fried nuts, raisins, and cardamom powder. Stir well to combine.
  7. Cover and simmer on low for another 5 minutes, then remove from heat.
  8. Serve the Goan Dessert Sakhar Bhaat as a sweet finish to your Goan-inspired meal.
