Chicken Hainan and Hainanese Rice Recipe
Ingredients
For the Chicken Hainan:
- 4 whole chicken thighs (thigh and drumstick)
- 6 cloves of garlic
- 3 slices of ginger
- 1 stalk of lemongrass
- 2 bay leaves
- 1 lime or lemon
- 1/2 onion
- 2 tablespoons fish sauce
- 2 tablespoons sesame oil
- A pinch of salt
- Water
- Chicken broth powder or block (optional, not used in this recipe)
For the Hainanese Rice:

- 3 cups of rice
- 4 cloves of garlic
- 2 slices of ginger
- 1 stalk of lemongrass, bruised
- 2 bay leaves
- 2 tablespoons sesame oil
- A pinch of salt
- Chicken Hainan broth
- Margarine
For the Hainan Sauce:
- 1 grated garlic clove
- 2 tablespoons sweet soy sauce
- 2 tablespoons soy sauce
- 2 tablespoons sesame oil
Optional Accompaniments:
- Cucumber
- Green onions
- Fried shallots
- Emping (Indonesian crackers)
Instructions
Cooking Chicken Hainan:
- Clean the chicken thoroughly and rub it with a pinch of salt and the juice of the lime or lemon. Let it sit for 10 minutes.
- While waiting, coarsely chop the onion and grate the garlic and ginger.
- Boil water in a pot. Once boiling, add the onion, garlic, ginger, lemongrass, and bay leaves. Allow it to simmer until fragrant.
- Add the chicken and a little sesame oil to the pot. Cook over medium heat for approximately 40 minutes.
- It is advisable to use plenty of water for boiling the Chicken Hainan since the broth will be used for both the chicken soup and cooking the rice.
Cooking Hainanese Rice:
- Wash the rice thoroughly and drain.
- Grate the garlic and ginger.
- Melt margarine in a pan over medium heat. Sauté the garlic, ginger, lemongrass, and bay leaves until fragrant and soft.
- Add a little water and stir until boiling. Once boiling, add the washed rice to the pan and stir until the water and spices are absorbed.
- Transfer the rice and spices to a rice cooker.
- Cook the rice using the Chicken Hainan broth, adding a pinch of salt and more sesame oil. You can also place the boiled chicken into the rice cooker to enhance the flavor of the rice.
Preparing the Hainan Sauce:
- Combine all sauce ingredients in a bowl and mix well.
Serving:
- Once the rice is cooked, serve the Chicken Hainan and Hainanese Rice with the prepared sauce and broth.
- Garnish with green onions in the broth, fried shallots on the rice, and cucumber slices as a side.
