Ayam Woku: Indonesian Spicy Chicken Stew Recipe
Ingredients:
- 1 whole free-range chicken, cleaned and cut into serving pieces
- 2 stalks green onions, coarsely sliced
- 1 stalk lemongrass, smashed
- 1 tomato, cut into 6 wedges
- 6 kaffir lime leaves
- 1 turmeric leaf
- 15 Thai bird chilies, whole
- Salt and seasoning to taste

- 3 cloves garlic
- 20 Thai bird chilies
- 5 red chilies
- A thumb-sized piece of fresh turmeric
- A thumb-sized piece of fresh ginger

Start by washing the chicken thoroughly. Place the chicken in a pot of boiling water for a few minutes to remove any unpleasant odors. Drain and set aside. -

In a blender or food processor, combine the shallots, garlic, Thai bird chilies, red chilies, turmeric, and ginger. Blend until you achieve a smooth paste. -
Cook the Spice Paste:
Heat a generous amount of oil in a large pot or wok over medium heat. Add the blended spice paste to the pot. Sauté the paste, stirring continuously, until it becomes fragrant and the raw smell dissipates. -
Combine Ingredients:
Add the green onions, lemongrass, tomato wedges, kaffir lime leaves, and turmeric leaf to the pot with the sautéed spice paste. Stir well to combine. -
Add the Chicken:
Gently add the chicken pieces to the pot, ensuring they are well coated with the spice mixture. Season with salt and your preferred seasoning. Pour in enough water to cover the chicken. -
