Bakso Sapi (Indonesian Beef Meatballs) Recipe

Ingredients:

For the Meatballs:

  • 500 grams ground beef
  • 1 egg white (whole egg can be used if already added)
  • 3 tablespoons fried shallots
  • 3 tablespoons fried garlic
  • 100 grams tapioca flour
  • 1 teaspoon flavor enhancer
  • 1 teaspoon ground pepper
  • 1 teaspoon fine salt
  • ½ teaspoon baking powder
  • 250 grams chicken fat (optional)
  • Ice cubes (as needed)
  • Water (for boiling the meatballs)

For the Broth:

  • Minced garlic (to taste)
  • Ground pepper (to taste)
  • Chopped green onions (to taste)
  • Flavor enhancer (to taste)
  • Salt (to taste)

For Serving:

  • Yellow noodles
  • Rice vermicelli (mihun)
  • Glass noodles (soun)
  • Bean sprouts (toge)
  • Celery leaves (sledri)
  • Fried shallots
  • Chili sauce (optional)
  • Tomato sauce (optional)
  • Soy sauce (optional)
  • Vinegar (optional)

Instructions:

  1. Prepare the Meatball Mixture:

    1. Place all the meatball seasonings, except the tapioca flour, into a blender. If you prefer to use a whole egg, add it here. Since we’re using a blender, divide the ground beef into four parts and blend each part separately until smooth.
    2. Transfer the blended beef mixture into a large bowl and mix in the tapioca flour until well combined.
  2. Shape the Meatballs:

    1. Bring a pot of water to a boil, then turn off the heat.
    2. To shape the meatballs, use your right hand to hold a portion of the beef mixture, press it through your thumb and forefinger, and scoop it out with a spoon. Drop the meatballs gently into the hot water.
    3. Once all the meatballs are in the water, turn the heat back on. Allow the meatballs to cook until they float to the surface. Remove the floating meatballs and cool them by placing them in front of a fan or letting them air dry.
  3. Prepare the Broth:

    1. In a separate pan, sauté minced garlic until fragrant.
    2. Add ground pepper, flavor enhancer, and salt to taste.
    3. Pour this mixture into the boiling water (which you can use to serve the meatballs), and let it simmer to infuse the flavors.
  4. Serve the Bakso:

    1. To serve, cook the yellow noodles, rice vermicelli, and glass noodles according to the package instructions.
    2. Prepare the bean sprouts and celery leaves as desired.
    3. In serving bowls, add the cooked noodles, bean sprouts, and celery. Place the meatballs on top.
    4. Ladle the hot broth over the meatballs and noodles.
    5. Garnish with fried shallots and any additional condiments like chili sauce, tomato sauce, soy sauce, or vinegar according to your taste.
