Gulai Sapi Mak Yuss
Ingredients
- 2 kg beef with bones
- 1 stalk of lemongrass, crushed
- 1 thumb-sized piece of galangal, crushed
- 2 bay leaves
- 2 kaffir lime leaves
- 1 whole nutmeg
- A stick of cinnamon
- 2 packets of instant coconut milk
For the Spice Paste:
- 5 candlenuts
- 5 shallots
- 3 cloves of garlic
- Pepper and coriander to taste
- Cumin to taste
- 1/2 thumb-sized piece of turmeric
Instructions

Initial Preparation:
- Boil the beef with bones for approximately 3 minutes.
- Remove the beef and rinse it thoroughly under running water to clean.

Cooking the Beef:
- Place the cleaned beef into a cooking pot.
- Add enough water to cover the beef.
- Add the crushed lemongrass, crushed galangal, whole nutmeg, and cinnamon stick to the pot.
- Continue boiling the beef until it becomes tender.

Adding the Spice Paste:
- Once the beef is tender, add the prepared spice paste to the pot.
- Stir the mixture and bring it to a boil.

Finishing Touches:
- Add the instant coconut milk to the pot along with salt and Royco seasoning to taste.
- Allow the mixture to cook until it reaches a boil again.
- Taste and adjust the seasoning as needed.

Final Steps:
- Once the dish has reached the desired flavor and consistency, turn off the heat.
- Cover the pot and let it sit for approximately 5 minutes.
