Mie Kocok Kaki Sapi is a traditional Indonesian noodle soup featuring tender beef feet, aromatic spices, and a medley of fresh ingredients. Ingredients
- 1 beef foot (kaki sapi) or beef tendons, cleaned and prepared
- 3000 ml water
- 500 grams wide rice noodles (referred to as mie gepeng, commonly used in Mie Kocok)
- 250 grams bean sprouts, briefly cooked
- 3 tablespoons oil (for sautéing)
- 7 cloves shallots
- 5 cloves garlic
- 1 tablespoon ground nutmeg
- 2 tablespoons ground black pepper
- 1 tablespoon dried shrimp (ebi), soaked in hot water
- 3 tablespoons salt
- 4 bay leaves
- 2 stalks lemongrass, bruised
- Chopped green onions
- Chopped fresh cilantro (for garnish)
- Sweet soy sauce (for serving)
- Lime or calamansi (for serving)
- Fried shallots (for garnish)
- Finely ground bird’s eye chilies (for sambal, optional)

Cook the Beef Foot:
- In a large pot, bring water to a boil. Add the beef foot and simmer until the meat becomes tender. This process may take a few hours, so be patient. Once tender, cut the beef into small cubes and return them to the pot.
