Nasi Kebuli Sapi is a rich and flavorful Indonesian dish that features tender beef cooked with aromatic spices and rice. Here’s how you can make this delicious Nasi Kebuli Sapi from scratch:

Ingredients:

  • 500 grams beef (cut into large chunks)
  • 1 liter rice
  • 1 onion, chopped coarsely
  • 15 shallots
  • 13 garlic cloves
  • 6 star anise
  • 6 cloves
  • 3 cinnamon sticks
  • 6 cardamom pods
  • 1 sachet of curry powder (I use Indofood brand)
  • 1 small can of coconut milk (Kara brand)
  • Oil (for frying)
  • Salt, to taste
  • Sugar, to taste
  • Ground spices:
    • 1 teaspoon black pepper
    • 1 teaspoon coriander
    • 1 teaspoon fennel seeds
    • 1 nutmeg
    • 10 red chilies
  • Water (for broth and rice cooking)

Instructions:

  1. Prepare the Ingredients:

    • Coarsely chop the onion.
    • Finely grind the shallots, garlic, red chilies, black pepper, coriander, fennel seeds, and nutmeg together to create a spice paste.
  2. Cook the Beef:

    • Heat oil in a large pot over medium heat. Add the chopped onion and sauté until fragrant and golden brown.
    • Add the ground spice paste and the whole spices (star anise, cloves, cinnamon sticks, and cardamom pods). Continue to cook until the mixture is aromatic.
    • Introduce the beef chunks to the pot. Season with salt and sugar to taste. Allow the beef to marinate in the spices for about 10 minutes.
    • Pour in a small amount of water and cook until the beef starts to brown.
    • Add the coconut milk and additional water to cover the beef. Simmer until the beef becomes tender and the flavors meld, which should take about 1 to 1.5 hours.
  3. Prepare the Rice:

    • Rinse the rice under cold water until the water runs clear.
    • In a separate pot, pour in the beef broth you just cooked and use it to cook the rice. Bring to a boil, then reduce the heat to low and cover. Cook until the rice is almost done, absorbing most of the liquid.
  4. Steam the Rice:

    • Transfer the partially cooked rice to a steamer basket lined with a clean cloth or cheesecloth.
    • Steam the rice for 30 minutes, or until fully cooked and fluffy.
  5. Combine and Serve:

    • Once the rice is cooked, fluff it with a fork and mix it with the beef and spices.
    • Serve the Nasi Kebuli Sapi hot, garnished with additional fried shallots or fresh herbs if desired.
