  • 1 packet chicken bouillon powder (kaldu bubuk)
  • Salt, to taste
  • 3-4 small ice cubes (crushed)

Instructions:

  1. Combine Ingredients:
    In a large mixing bowl, combine the ground beef with the tapioca flour, minced garlic, fried shallots, ground black pepper, chicken bouillon powder, and salt. Mix thoroughly until all the ingredients are well incorporated.

  2. Process the Mixture:
    Transfer the meat mixture to a food processor. Pulse until the mixture becomes a smooth, cohesive paste. Gradually add the crushed ice while processing to keep the mixture firm and prevent it from becoming too runny. Continue to blend until the mixture is smooth and can hold its shape.

  3. Shape the Meatballs:
    Once the mixture is well combined, use your hands or a spoon to shape the meat mixture into small balls. Ensure they are evenly sized for consistent cooking.

  4. Cook the Meatballs:
    Bring a large pot of water to a boil. Gently drop the meatballs into the boiling water. Cook until the meatballs float to the surface, indicating they are cooked through. This typically takes about 10-15 minutes.

  5. Prepare the Broth:
    For serving, you can use a pre-made beef broth or make your own by simmering beef short ribs or other bones in water until a rich flavor is developed. In this recipe, the broth from simmered beef ribs is used, so the cooking water from the meatballs is not needed.
