Authentic Indonesian Beef Meatballs (Bakso Daging Sapi) Without Baking Powder
Ingredients:
- 500 grams fresh beef (cut into small pieces)
- 5 cloves garlic (thinly sliced and fried until golden)
- 7 shallots (thinly sliced and fried until golden)
- 1 egg white
- 2 teaspoons salt
- 1/2 teaspoon black pepper
- 1 teaspoon sugar
- 1 teaspoon beef broth powder (non-MSG)
- 150 grams ice cubes (crushed)
- 100 grams sago flour
- For the boiling broth:
- 1 stalk green onion (cut into large pieces)
- 2 stalks celery (cut into large pieces)
- 1 small onion (sliced into two halves)
- 2 cloves garlic (thinly sliced and fried until golden)
Instructions:

Prepare the Beef:
- Wash the beef thoroughly and cut it into small pieces.

Prepare the Aromatics:
- Place the fried garlic and shallots into a food processor or chopper. Blend until finely minced.

Blend the Meat Mixture:
- Add the beef pieces to the food processor along with salt, black pepper, sugar, beef broth powder, and crushed ice. Process until the mixture starts to come together.
- Add the egg white and continue processing until the mixture is as smooth as possible.

Incorporate the Sago Flour:
- Transfer the meat mixture to a large bowl. Add the sago flour and mix gently until evenly combined. Be careful not to overmix, as this can make the meatballs tough.

Prepare the Broth:
- In a large pot, bring water to a boil. Add the green onion, celery, small onion halves, fried garlic, and shallots. Reduce the heat so that the water simmers gently.

Form and Cook the Meatballs:
- Using a spoon or ice cream scoop, form the meat mixture into balls and drop them into the simmering broth. Continue until all the meatballs are in the pot.

Cook Until Floated:
- Let the meatballs cook until they float to the surface. Allow them to cook a little longer to ensure they are fully cooked. Once done, remove the meatballs from the pot and place them into a bowl of ice water to cool and firm up.

Prepare the Broth:
- Don’t discard the leftover boiling water. It can be used as a base for the bakso broth. Simply season it with sautéed garlic, black pepper, and salt to taste.
