Authentic Indonesian Beef Meatballs (Bakso Daging Sapi) Without Baking Powder

Ingredients:

  • 500 grams fresh beef (cut into small pieces)
  • 5 cloves garlic (thinly sliced and fried until golden)
  • 7 shallots (thinly sliced and fried until golden)
  • 1 egg white
  • 2 teaspoons salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon sugar
  • 1 teaspoon beef broth powder (non-MSG)
  • 150 grams ice cubes (crushed)
  • 100 grams sago flour
  • For the boiling broth:
    • 1 stalk green onion (cut into large pieces)
    • 2 stalks celery (cut into large pieces)
    • 1 small onion (sliced into two halves)
    • 2 cloves garlic (thinly sliced and fried until golden)

Instructions:

  1. Prepare the Beef:

    • Wash the beef thoroughly and cut it into small pieces.
  2. Prepare the Aromatics:

    • Place the fried garlic and shallots into a food processor or chopper. Blend until finely minced.
  3. Blend the Meat Mixture:

    • Add the beef pieces to the food processor along with salt, black pepper, sugar, beef broth powder, and crushed ice. Process until the mixture starts to come together.
    • Add the egg white and continue processing until the mixture is as smooth as possible.
  4. Incorporate the Sago Flour:

    • Transfer the meat mixture to a large bowl. Add the sago flour and mix gently until evenly combined. Be careful not to overmix, as this can make the meatballs tough.
  5. Prepare the Broth:

    • In a large pot, bring water to a boil. Add the green onion, celery, small onion halves, fried garlic, and shallots. Reduce the heat so that the water simmers gently.
  6. Form and Cook the Meatballs:

    • Using a spoon or ice cream scoop, form the meat mixture into balls and drop them into the simmering broth. Continue until all the meatballs are in the pot.
  7. Cook Until Floated:

    • Let the meatballs cook until they float to the surface. Allow them to cook a little longer to ensure they are fully cooked. Once done, remove the meatballs from the pot and place them into a bowl of ice water to cool and firm up.
  8. Prepare the Broth:

    • Don’t discard the leftover boiling water. It can be used as a base for the bakso broth. Simply season it with sautéed garlic, black pepper, and salt to taste.

Serving Suggestion:

  • Serve the bakso daging sapi hot in a bowl with the seasoned broth. Enjoy it with some steamed rice or noodles for a complete meal.
