Bakso Sapi (Indonesian Beef Meatballs)
Ingredients:
For the Meatballs:
- 500 grams beef, minced
- 60 grams sago flour (also known as tapioca flour)
- 7 cloves garlic
- 1/2 teaspoon ground black pepper
- 100 cc ice water
- 1 egg
- Salt to taste
For the Broth:
- 2 stalks green onions, sliced
- 6 cloves garlic
- 1/2 teaspoon ground black pepper
- 500 grams beef bones (e.g., shank or marrow bones)
- 2 liters water
- Salt to taste

Prepare the Meatball Mixture:
- Begin by finely grinding the garlic, black pepper, and a pinch of salt together.
- Next, process the beef until it reaches a smooth consistency. Mix it with the sago flour, the ground spice mixture, ice water, and the egg. Stir until all ingredients are well combined.

Cook the Meatballs:
- Bring a large pot of water to a boil. Once boiling, turn off the heat.
- Shape the meat mixture into balls according to your preferred size using your hands.
- Carefully drop the meatballs into the hot water. Repeat until all the meat mixture is used.
- Turn the heat back on and cook the meatballs until they float to the surface. This indicates they are fully cooked. Remove and drain the meatballs.

Prepare the Broth:
- Grind the garlic, black pepper, and salt together to form a spice paste.
- In a separate pot, bring 2 liters of water to a boil. Add the spice paste and beef bones to the boiling water. Simmer until the broth is flavorful and has reduced slightly.
- Adjust seasoning with salt to taste and strain the broth if desired.

Assemble and Serve:
- In serving bowls, place some yellow noodles or rice vermicelli (bihun) and add the meatballs.
- Pour the hot broth over the noodles and meatballs.
- Garnish with crispy fried shallots and sliced green onions.
- Serve hot and enjoy the delicious, hearty bakso sapi.
