Rawon Sapi (Beef Rawon Without MSG)

Ingredients

  • 1 kg beef: Cut against the grain for tenderness.
  • Tapioca starch: As needed to coat the beef.
  • Oil: For sautéing.
  • 1 liter water

Ground Spices

  • 5 kluwek nuts: Crack open and use the inner part.
  • 10 shallots
  • 4 cloves garlic
  • 4 candlenuts
  • 1 tablespoon coriander seeds
  • 1 piece of ginger: About 2 inches.
  • 1 piece of turmeric: About 2 inches.
  • 2 teaspoons white pepper
  • 10 curly red chilies
  • 10 red bird’s eye chilies: Adjust according to taste.

Additional Seasonings

  • 2 stalks lemongrass: Bruised.
  • 10 kaffir lime leaves: Remove the central stem.
  • Salt: To taste.
  • Sugar: To taste.
  • Mushroom broth powder (non-MSG): To taste.

Steps

  1. Prepare the Beef: Cut the beef against the grain into bite-sized pieces. Rinse thoroughly, then coat with tapioca starch. Let it sit for 30 minutes to 1 hour to tenderize the meat. Rinse again and drain well.

  2. Sauté the Spices: Heat oil in a large pot over medium heat. Sauté the ground spices along with the kaffir lime leaves and lemongrass until fragrant.

  3. Cook the Beef: Add the beef to the pot and stir until it changes color and starts to cook.
