Rendang Daging Sapi: A Flavorful Indonesian Beef Rendang

Ingredients:

  • 500 grams beef (diced to desired thickness)
  • 2 kaffir lime leaves
  • 2 bay leaves
  • 1 turmeric leaf
  • 1 stalk lemongrass (crushed)
  • 1 liter thick coconut milk
  • Sugar and salt to taste

Spice Paste:

  • 10 red chilies
  • 8 shallots
  • 6 garlic cloves
  • 2 candlenuts
  • 1 teaspoon coriander
  • 1 teaspoon black pepper
  • 1 piece galangal (about 1-inch)
  • 1 piece ginger (about 1-inch)

Instructions:

  1. Prepare the Beef: Begin by thoroughly cleaning the beef under cold water. Cut the beef into pieces of your preferred thickness.

  2. Prepare the Spice Paste: In a blender or food processor, combine the red chilies, shallots, garlic cloves, candlenuts, coriander, black pepper, galangal, and ginger. Blend until you achieve a smooth paste.

  3. Cook the Spice Paste: Heat a generous amount of oil in a large pan or Dutch oven over medium heat. Add the spice paste and cook, stirring frequently, until the paste becomes fragrant and slightly darker in color.

  4. Add Aromatics: Add the kaffir lime leaves, bay leaves, turmeric leaf, and crushed lemongrass to the pan. Continue to cook for a few minutes, allowing the aromatics to release their flavors.

  5. Add Beef and Coconut Milk: Stir in the diced beef and mix well with the spice paste and aromatics. Pour in the thick coconut milk, stirring to combine everything evenly.

  6. Simmer: Bring the mixture to a gentle boil, then reduce the heat to low. Allow it to simmer uncovered, stirring occasionally, until the beef is tender and the sauce has thickened. This can take about 2 to 3 hours. As the mixture simmers, it will reduce and the oil will begin to separate from the coconut milk.

  7. Season: Once the sauce has thickened and the oil has surfaced, taste the rendang and adjust the seasoning with sugar and salt according to your preference.

  8. Finish: Continue cooking until the sauce is deeply reduced and the oil has completely separated from the gravy. The beef should be tender and coated in a rich, flavorful sauce.

  9. Serve: Serve the Rendang Daging Sapi with steamed rice or your favorite side dishes. Enjoy this flavorful dish that’s sure to impress!
